Shortbread Cookies With Strawberry Jam



You may remember the post with the recipe for homemade peach jam and shortbread window cookies. These are so delicious, I have a hard time not eating all of the dough. Who doesn't like butter, flour, sugar all mixed together? 

Well, I know Valentine's Day is around the corner, and I recently found an awesome jar of organic strawberry jelly I have been wanting to use on these. They turned out so yummy, and they are so simple. I had time to make them all during nap time, but my kids woke just in time to help jelly them up and eat them ;)

You can find this recipe in many versions all over the internet, but this is what I did:

2 cups flour
1 cup cold, unsalted butter cut into cubes
1/2 cup granulated sugar
jam
1/4 tsp salt
optional: powdered sugar

Set your oven to 325 degrees. 
Put all ingredients into your mixer bowl, and mix on low for about 30 sec. Make sure to use the right attachment for your mixer to make dough.
Raise the speed a little, until a ball of dough forms.
Roll out until the dough is about 1/8th inch thick.
Refrigerate for 20 minutes.

Cut your bottoms and tops of your cookies out using any cookie cutters you wish.
 I had a small heart cutter, so that is what I used.
Set them on a pan and refrigerate for another 15 minutes.
Take your cold dough cookies out, and bake for about 13-15 minutes until a light brown.
Cool.

Sprinkle tops with some powdered sugar.
     Coat the bottoms with jam of your choice, and sandwich them together.
