If you are ever in a pinch, and don't have every ingredient or the time to make a cake from scratch, consider this "almost homemade" Blueberry Cream Cheese Cake I made up
Ingredients you need:
A box cake you like (white or vanilla work great)
1 block/package of cream cheese
2 cups of blueberries (fresh or frozen)
Make your box cake as directed.
Before pouring into your pan, sprinkle about 1/4 cup of the blueberries into the bottom of the pan, and pour batter over.
Make sure to reserve a cup of the cake batter in the bowl.
To that, mix in 1/2 block of softened cream cheese until smooth. Add another cup of the blue berries and mix slowly with a spoon.
Add this cake batter/cream cheese/ blueberry mixture to your cake, and cut it in slowly with a knife to spread throughout the cake gently.
Bake accordingly (most likely will add about 20 minutes onto the baking time)...just check for doneness.
To frost, I mixed the second half of the block of cream cheese with a table spoon or two of powdered sugar.
I softened this in the microwave for a few seconds, and poured on top, decorating with the rest of the blueberries.
