I wanted to share this super easy summer corn salad idea. You can serve this on any flat bread or even sourdough.
Summer Corn Salad
MAKES 4-6 SERVINGS
3 ears of corn
1 tbs butter
2 roma tomatoes
1/2 medium cucumber
olive oil, salt & pepper to taste
additional ingredients ideas: green bell pepper, mozzarella, purple onion, grilled chicken
1. Take the seeds out of your tomatoes and dice them
2. Dice your cucumber
3. Wash your corn, and cut the kernels off of the cob. Sautee kernels with the butter in a skillet on medium heat, stirring constantly... until softened (about 4-5 minutes)
4. Set your kernels in a bowl to cool.
5. In another bowl, mix all ingredients, adding the corn last.
Serve as topping to salad, or on your slices of bread. I used garlic naan bread this time.
Refrigerate and serve cold, but this also tastes great at room temperature.
